Why? Because the work shouldn't lean on the colour wheel to feel premium. Hierarchy comes from typography. Emphasis comes from scale. Trust comes from receipts.
Every UI surface, every package, every email follows the same rule. If we ever reach for a fourth colour, the design has failed.
